San Diego’s Galaxy Taco Closes in La Jolla Shores, Will Reopen Next Spring as New Restaurant

Launched in La Jolla Shores in 2015, the Galaxy Taco finally closed its doors on Wednesday October 27th. Owner Trey Foshee, who is also Executive Chef Partner at George’s at the Cove, tells Eater that he’s still ironing the details, but plans to open a new restaurant in the space by spring 2022. Galaxy Chef Christine Rivera and her kitchen team will be moving to downtown La Jolla to work at George in the meantime.
Rivera cooked at George’s California Modern, its gourmet component, for three years before being selected to open Galaxy, where she was recognized for her ambitious tortilla program and named Eater Young Guns Winner in 2016. The casual restaurant with a modern Mexican menu was also known for its events, from book signings and Dia de los Muertos dinners to its popular “Taco Takeover” series with guest chefs from San Diego and beyond.
Foshee cites rising operating costs as one of the main reasons for the shutdown: “The ceiling of what people are willing to pay for good ingredients and well-cooked Mexican food is too low and we’ve been fighting it for six and a half years-half years,” said he, “I am proud of what we have achieved there. We’ve had a good run, but it’s time for a change. ”The chef, who temporarily closed Georges California Modern during the pandemic, says the restaurant will be on hiatus for the time being, while Georges Ocean Terrace and the Level2 bar are still are open.
